在物理學中,過熱(又稱沸騰延遲,英語:Superheating)是指液體被加熱到沸點以上的溫度而不沸騰的現象。此為所謂的準穩態,由外部或內部影響所引起的沸騰可能隨時發生。[1][2]在乾淨的容器中加熱同相物質會出現過熱現象,同時要避免成核現象的出現。需注意的是加熱時欲出現過熱現象,需要避免攪動液體。
